You’ll need…
- 1 package of whole wheat tortillas
- 1 can black or kidney beans, drained and rinsed
- 1 cup frozen corn
- 1 cup shredded cheese (think mozzarella, monterey jack, etc)
- 2 avocados, chopped (or made into guacamole, if time and ingredients permit)
- 1 tomato, chopped - or 1 cup tomato salsa
Preheat oven to 400°F.
1. Lay tortillas flat and fill left side of each shell with beans and corn. Top with cheese. Fold tortillas in half and press down firmly on top. Place on baking sheet.
2. Bake for 10 minutes. Remove from oven. Top with avocado and tomato and serve. That’s really it.
