You’ll need…

  • 2 pie crusts – make or buy – we won’t judge
  • 2 Tablespoons dijon mustard
  • 1/4 cup butter
  • 4 leeks
  • 1 clove garlic
  • 10 medium mushrooms (optional)
  • 4 eggs
  • 1 cup of milk
  • 1/2 cup diced or crumbled feta cheese


Preheat oven to 350°F.

1.  Spread dijon over the bottom of the pie crusts.  Set aside.

2.  Melt butter and sautée leeks and garlic for a few minutes until soft.  Add mushrooms and cook for a couple minutes longer.

3.  Spread mixture evenly across pie crusts.

4.  Mix eggs and milk and spoon over leek mixture.

5.  Sprinkle feta on top.

6.  Bake for 45 minutes.  Enjoy.
